Mutton Korma(with yogurt)




                           This is favorite dish in Northern India and Pakistan.

What is it:-
This is sometimes call as Mutton Korma and sometimes as Mutton curry. Korma is basically having more or less amount of yogurt. As we are going to use some amount of yogurt you can call this Muttom Korma.

Ingredients:-

1 kg of mutton cut into standard pieces.
Garam Masala in whole
Garam Masala powder
6 tbsp oil.
Ginger/Garlic paste 2 tsp.
One onion cut in rings.
Two onions grinded into paste.
Two tomato cut into smallest possible pieces.
1 tsp turmeric powder.
2 tsp chilli powder.
1 tsp coriander powder-(serbuk ketumbar)
4 tbsp yogurt.
Salt to taste.









Preparation:-

Step1:-
Put 3 tbsp oil in a pan. Put whole Garam masala, when fragrance comes out, put onion rings and ginger-garlic paste. Stir so that it dont get stick. When mixture is brownish put tomato pieces and get all the tomato pieces become juicy.

Step2:-
Put the mutton. Stirr untill water goes out from mutton and oil separates.Once done keep this separate.

Step3:- 
In another pan, again put the remaining 3tbsp oil. Once hot, pour the grinded onion paste. Get it yellowish. Put turmeric, coriander and chilli powder. Get all the spices roasted. This part is important as if the spices are not roasted properly then you will get raw spice smell. If the spices is burnt, you will get burnt smell.

Step4:-
Once you done is step 3, pour back the mutton content from the other pan to this pan.
Add yogurt and stirr.
Mutton or spices should not stick. Do this in moderate temparature.
After 10 min put 2 cups of hot water and cover the lid.
Check from time to time so that things dont get stick in the button. Add more hot water in need.
The mutton takes time to get cooked properly.
After 20-25 min boiling check the amount of soup in the pot and add proper amount of salt.
Cover the lid and close the oven.

Step5:-
Though cooking is done, one small tips; 5 min before serving- warm the content- spread a pinch of garam masala powder and keep the lid closed for 5 min.Then serve.

Serving:-
Better to serve with chapati ( thin wheat bread), tandoor ( thick wheat bread ) or poori ( small white flour bread ).But can be served with rice too.
Mutton get more tasty on following days, so putting proper water and boiling it will make the dish more tasty.

Can serve 3-4 person.


Cooking Time:-
30-40 Min.
